The origins of this popular cake and why it was given such an endearing name remain a mystery to this day. Maybe it’s because once you sink your teeth into a piece of “Italian Love Cake”, it will literally be love at the first bite.

Italian desserts are famous for being rich, tasty and delicious and this delicious cake is no exception. Combine the slightly sweet taste and creamy texture of ricotta cheese with a moist marble cake. Despite the varied number of recipes available, the end result will be a beautiful creation of savory decadence; perfect for celebrating Valentine’s Day.

Cake ingredients:

1 box Marble Fudge Cake Mix
(Prepare the cake and cake pan according to the instructions on the box)

Ingredients for frosting:

1 cup of Milk or Half and Half
1 package (3.9 ounces) instant chocolate pudding
1 container (8 oz.) Dairy-free whipped cream; thawed

Cheese mix ingredients:

2 pounds ricotta cheese
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup of Milk or Half and Half

Cake directions:

Preheat the oven to 350 F.
Grease and flour a 13 x 9 x 2-inch or heart-shaped skillet.
Prepare the cake mix, stop in the prepared mold and reserve.
Combine ricotta cheese, sugar and vanilla and mix until well combined and pour over the cake batter.
As it bakes, the cake will rise above the batter and the cheese will settle to the bottom.
Bake 45 to 60 minutes or until a cake tester, inserted in the center, comes out clean.

Icing directions:

Mix together the chocolate pudding and whipped cream. Beat until thick and creamy.
Add the milk or half and half and beat until smooth and firm.
Once the cake has completely cooled, spread the topping over the cake.
Refrigerate one hour before serving.
Makes 12 servings.

Optional:
Before serving, top your creation with red sprinkles and cherries to add color and decoration.
